For Cooking Chhole:
- 2 cup chhole or channa (white chick peas)
For Making Gravy:
- 2 tablespoons oil
- 1 and ½ cup finely chopped onions
- 1 green chili

- 1 cup tomatoes – finely chopped or pureed
- Salt as required

- 1 tablespoon chhole masala
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
For Garnishing:
- Thin ginger juliennes 1 or 2
- 2 tablespoons chopped coriander leaves
Pre-Preparation
- Soak chhole or channa overnight or at least for 8 hours.
- When chhole is soaked properly, drain the water and rinse them well.
- Add chhole to pressure cooker and add adequate water. Avoid adding too much water as it will over cook chhole.

- Pressure cook on small or medium flame for at least 4 whistles until chhole is soft and properly cooked. It should not be overcooked.
